Calling the restaurant "Umā" comes from the idea of gourmet cuisine without borders, a restaurant where the customer can experience travelling through food. The word Umā has many meanings, such as delicious, appetizing, intelligent and joy. The concept behind our cuisine is based on a BISTRONOMIC model or BISTRONOMY, a concept that defines the fusion between a bistro, that classic cuisine of the good product and a gastronomy in which we allow ourselves to apply current and avant-garde techniques to make a more personal culinary experience.

A part la présentation des plats qui était impeccable, la qualité des assiettes et le service doivent être sérieusement améliorés... Le site internet annonce une cuisine nikkei... Les associations de 'saveurs' me rappellent plutôt les Etats de l'Ouest rural des Etats-Unis il y a 20 ans quand ils commençaient à s'essayer à la cuisine subtile....Un mix d'aliments et d'accompagnements qui détruisent ou gâchent l'ensemble... En outre, la cuisine manque cruellement d'épices et de subtilité ; les mises en bouche et les mignardises étaient terriblement grasses, le gingembre de l'enrée (homard) totalement insipide et les cèpes du plat (biche) démesurément salées au point d'en être immangeables. Une fois mais pas 2.

Globalement un excellent repas, malgré un service un peu froid et un dessert vraiment raté. Cependant les plats salés étaient originaux et bien maîtrisés. Un vrai plus... l'accord mets et boissons sans alcool.
