I was highly satisfied with my dinner. I sayed at the Hyllit Hotel so I was offered a complementary glass of champagne as a treat when I turned in my coupon from the hotel. This restaurant's calibre is worth of a Michelin star (that is, if it doesn't have one already, in which case it deserves another). My only complaint is that I was not allowed to request tap water. Unbenownst to the restaurant, I am actually a sanitation and hygeine specialist: the reason I was in Antwerp in the first place was to meet up for a quality service audit of the water quality of the city and I can safely say that there would've been no danger for them to offer me a glass of tap water, especially because (I presume) they used the water in the kitchen. That aside, the cod I had was delicious!! Not only was it perfectly cooked (though it could've been seasoned a little more) but I was served a generous portion. The potato croquettes were delicious, as was the steamed green beans and steamed onion accompnaying my fish. I started the meal with a pasta course: tagialtelli with a truffle butter sauce. The truffles and pasta were good, but I would recommend additional flavourings to bolden the dish as it tasted a bit bland in terms of the sauce being primarily butter (perhaps some lemon, a bit more salt, and/or white/black pepper to enhance the flavours). The wine was delicious: they know what they're doing there.
