Christian Claes is a seasoned chef who knows how to please both classic and more adventurous food lovers. He knows how to harmonize flavors and structures on the plate. Like with these mackerel rillettes that he combines with crayfish tartar, avocado purée and a piece of fresh mackerel for the finish. Or this pleasant Basquaise sauce with tomatoes, burrata and garlic milk froth that keeps company with a brilliant, perfectly cooked cod. As for his perfectly pink Challans duck, presented in association with a mushroom salpicon and al dente asparagus, it earned him half a point more.
