Javier is zeer veeleisend wat betreft de oorsprong en de kwaliteit van het vlees dat sinds …. de reputatie van zijn restaurant hooghoudt. De runderen worden in de streek " Pampa Humeda " in de provincie Buenos Aires in openlucht gekweekt en krijgen 100% natuurlijke voeding. Met het oog op de verschillende voorbereidingen werd een grillardin hiertoe speciaal opgeleid. Samen met zijn Franse chef Ludovic Saget heeft Javier een originele en smakelijke kaart gecreeërd die naast het succulente Argentijnse vlees ook een mooie plaats biedt aan verse pasta, mediterrane groenten en prachtige slaatjes. Ludovic, die van Bretoense oorsprong is, wijdt eveneens een bijzondere aandacht aan de dagelijkse aankomst van verse vis. Naast de normale kaart is er een bord met gevarieerde suggesties die alle 2 weken vernieuwd worden.
